Introducing the Latest Chuck’s: A New American Bistro in Central Milan

Introducing the newest Chuck’s bistro from Chuck George, his second site in Milan following his smashburger success in Sidewalk Kitchens. A New American bistro-style restaurant serving Italian American cuisine alongside natural wine and beer, Chuck’s is a place that feels casual, connected, and a little nostalgic.

The menu brings a New American twist to Milan’s café culture – comforting, playful, and made for everyday eating. Expect a new take on the famous smashburger, this time with fried onions, as well as brand new favourites including an Eggplant Parmesan, and Alfredo Casarecce. On the drinks side, there’s everything from specialty cocktails to natural wines, and ice-cold beer.

A constantly evolving culinary force, Chuck’s ‘no modification’ smashburgers have garnered global acclaim and a devoted following, with his focus on American cuisine and its global influence. In Milan, this brand new Chuck’s will also move in a new direction, celebrating his heritage with a nod towards his signature dishes but this time with an Italian sensibility.

“What was to be solely a burger shop, evolved alongside the design process,” says Chuck Gegorge, “It’s in my nature to constantly change, reiterate, evolve the work that I’m doing and the conversation I am genuinely just having with myself. As for the introduction of Italian-American dishes on the menu in Italy, well, it’s quite a conversation starter isn’t it?

The Menu

Located on Via Vigna 6, Chuck’s will reimagine New American comfort food in a stylish, contemporary bistro setting. While the signature griddle burger stacks remain a beloved nod to the brand’s origins, the menu offering continues to transcend the burger with this dynamic culinary identity. Highlight dishes include:

  • Grandma Mary’s Apple Butter Grilled Cheese
  • Chuck’s Fried Onion Smashburger
  • Spaghetti & meatballs
  • Parm Platter
  • Cheesecake & Chicory chocolate sauce

Drinks

The drinks offering will focus on natural wines and beers, with cocktails on tap from Spill Drinks. The wine list will be curated with Cedric Buchet, prolific fashion photographer turned oenophile, who will supply the restaurant with wines from France and Switzerland with a list focusing on biodynamic bottles from the likes of Anders Frederik Steen, Le Frēres Soulier, Tyalo Tyalo, Jérôme Guichard and Chuck’s collaboration with Batch Wines, ‘LMNOP’. For those who prefer hops, Mikkeller will be available on tap, alongside a concise list of batched cocktails from Spill Drinks, featuring seasonal creations such as Americanos and crisp Gin and Tonics in the colder months, changing to Spritz and Mules come summer.

Design

In collaboration with the Milan based architecture firm OTS, Chuck’s will pay tribute to the design tropes of the American Diner. The signature blue-and-white checkered floor, bespoke lighting, retro style marble tables will be crafted by the same artisans behind Madrid’s interiors, reflecting Chuck’s meticulous vision. Through the day, floor to ceiling windows will flood the space with natural light, before metamorphosing into more of a late night diner, softly aglow under vintage globe lighting. In line with Chuck’s love of art, works will include the likes of Lorena Lohr and Ralph Goings.

Chuck comments on the design: “Given the sites large windows, I wanted to create a juxtaposition from the cobblestoned streets adjacent to it, so I began the design around the brightly coloured ceramic tile floor and created the space around that. To refrain from clashing with its historical surroundings, I inserted mute wood tones, gentle marble edges as well as curved wall sconces with matte globe spheres to soften the experience as your eyes wander from floor to ceiling.”
