The Evolv Collection Acquires Vinoteca in Strategic Portfolio Expansion

The Evolv Collection have announced the acquisition of Vinoteca, the celebrated London wine bar group, marking a significant milestone in the company’s strategic expansion plans. The acquisition will see Vinoteca’s acclaimed Farringdon and Bloomberg Arcade venues integrated into The Evolv Collection’s portfolio, coinciding with the opening of Sartoria Launceston Place on 4th November.

The Evolv Collection will transform Vinoteca’s Farringdon location into Vinoteca di Sartoria, introducing the Sartoria brand’s elegant Italian dining experience in an accessible, small plates format. Furthermore, a new Sartoria venue will open in Liverpool Street in January 2026, whilst Fiume in Battersea will be reimagined as Sartoria Battersea.

The acquisition accelerates The Evolv Collection’s vision for Sartoria, extending the brand originally founded by Sir Terence Conran in 1990 across London. The Sartoria family will encompass five locations: the flagship on Savile Row, Launceston Place (opening on 4th November), Battersea, Liverpool Street and Farringdon. Vinoteca City will be elevated with a new Mediterranean menu.

This strategic move allows us to introduce the elegance of Milanese dining to new audiences across London, whilst honouring what makes Vinoteca special.”

Each new Sartoria concept will offer a distinct experience whilst maintaining the brand’s signature Milanese elegance:

Vinoteca di Sartoria (Farringdon) will showcase cucina piccolo – small plates inspired by Sartoria Launceston Place’s lunch menu, complemented by Vinoteca’s renowned wine programme. The intimate format brings Sartoria’s refined Italian cuisine to a relaxed, wine-focused setting.

Sartoria Liverpool Street, opening January 2026, will operate as an all-day destination, mirroring the bar and café concept at Launceston Place. Guests can enjoy coffee and pastries in the morning, transitioning to small plates and wine throughout the day and evening.

Sartoria Battersea will combine the small plates offering with artisanal pizza, creating a neighbourhood Italian destination that captures the spirit of Milan’s vibrant dining scene.

The integration maintains Vinoteca’s celebrated wine expertise whilst introducing the precise tailoring, rich materials, and restrained elegance that define the Sartoria experience.
