From Michelin-starred innovation to intimate neighbourhood gem, Cascais’ rising stars are shaping the next chapter of Portugal’s culinary story, each bringing their own distinctive perspective to the region’s rich gastronomic landscape.
José Avillez
One of Portugal’s most celebrated chefs and restaurateurs, José Avillez has established himself as a leading figure in contemporary Portuguese gastronomy. A native of Cascais, he returned home in 2019 to open Cantinho do Avillez, following the success of its sister restaurants in Lisbon and Porto. Conceived as a tribute to the cuisine of his homeland, Cantinho do Avillez, is an elegant reinterpretation of traditional Portuguese flavours, blending global influences and nostalgic notes from his childhood. Each dish reflects Avillez’s culinary journey and his connection to Cascais.
Inspired by the coastal beauty and charming character of Cascais, Avillez recently expanded his presence in the region with the opening of Maré. Set within a restored seafront building just steps away from his childhood home, Maré pays homage to the town’s maritime heritage and exceptional produce. The menu celebrates the freshness and simplicity of the sea, through refined takes on Portuguese classics such as marinated corvina with red onion and avocado, amêijoas à Bulhão Pato and freshly caught sea bass. It is a place where gastronomy, landscape and memory converge, a true reflection of Cascais’ spirit.
Gil Fernandes
At just 28, Gil Fernandes became Executive Chef at Fortaleza do Guincho, Cascais’ most emblematic Michelin-starred restaurant. A figure of quiet confidence and remarkable precision, he has led the kitchen since 2018, honouring its distinguished legacy while bringing his own vision and finesse.
Set within a 17th-century fortress overlooking the Atlantic and the cliffs of Cabo da Roca, the restaurant offers a setting of striking beauty. Drawing inspiration from its coastal surroundings, Fernandes celebrates the freshness of local fish and seafood through his cultivated, nature-driven cuisine that captures the essence of the ocean.
Following a major refurbishment, Fortaleza do Guincho reopened its doors in March 2024, reaffirming its place as a pillar of contemporary Portuguese fine dining. That same year, Fernandes was named Rising Chef at the prestigious Portuguese Mesa Marcada Awards, a testament to his talent and growing influence within the country’s culinary sphere.
Tiago Penão
Tiago Penão’s culinary journey has been defined by precision, creativity and a relentless pursuit of excellence. Entering the world of gastronomy at just fifteen, he learnt his skills at some of Portugal’s most esteemed establishments, including the Hotel Penha Longa, before working alongside world-renowned chef Albert Adrià at Tickets and Pakta in Barcelona. In 2016, Penão was awarded a Michelin star while leading the kitchen at Midori, a moment that confirmed his place among Portugal’s most promising chefs.
In 2021, Penão came to Cascais to open Kappo, an intimate Japanese restaurant in the heart of the town. The name, meaning “to cut and cook,” encapsulates the very essence of his culinary philosophy, one rooted in precision, respect and connection. Designed around a counter that invites direct interaction between chef and guest, Kappo offers both an à la carte and an omakase tasting experience. Each dish reflects Penão’s mastery of Japanese technique and contemporary creativity.
At Kappo, every gesture, flavour and form reflects Penão’s devotion, a quiet yet genuine respect for culinary artistry that continues to elevate Cascais’ vibrant dining scene.
Diana Roque
With over two decades of experience, Diana Roque has built a career defined by technical mastery, discipline and a respect for culinary tradition. A graduate of the Escola de Hotelaria do Fundão, she honed her skills at renowned establishments, including the Sheraton, The Oitavos, Belcanto, and Feitoria, and further mastered her craft in Michelin-starred restaurants in New York and Barcelona.
In 2023, Roque returned to Portugal to lead Bougain Restaurant & Garden Bar in Cascais, a Mediterranean retreat surrounded by lush greenery and blossoming flowers. Under Roque’s direction, the restaurant celebrates the flavours and traditions of Italy, France and Portugal, weaving together the culinary identities of these three nations with balance and precision.
Her menu honours heritage while embracing innovation, presenting dishes such as Cured Lily, Carabinero Rice, Beef Wellington or Tiramisu. Each creation is a testament to Roque’s dedication to the best ingredients, her elegant restraint and her enduring belief that true gastronomy lies in the harmony between simplicity, elegance and emotion.
