Burro restaurant and bar from Conor Gadd Chef Co-owner of Trullo – one of London’s most loved restaurants – will open its doors in Covent Garden’s Floral Court early 2026. Conor joined the Trullo team as head chef shortly after it opened in 2010 and in 2022 took over as Managing Director. Burro will be his first solo venture.

Burro will offer honest cooking, Italian dishes that celebrate its rich history and popularity the world over. Conor will bring hospitality in its truest form, a true blend of fun and professionalism honed over a lifetime in the industry.
The menu will feature Italian classics, as well as some created specially to suit the evocative room and historic surroundings of Covent Garden. Guests will be able to indulge on a Bruschetta of Venetian chicken livers or Fried Artichokes drenched with lashings of bottarga and chilli. Pasta will follow, of course – Tagliatelli Duck and Porcini ragu, as well as signature Roman Fettucine ‘Alfredo’. Mains will range between Dover sole with caviar, Lobster ‘aqua pazza’ and a beautiful stand out Vitello al Burro. For dessert, Conor brings us outrageous Tiramisu ‘Bomboloni’ doughnuts and Almond Cake with butter and a glass of Marsala.
The design, by long term collaborator and friend Lisa Helmanis of DAY Studio, will reflect everything Burro embodies; as Lisa describes, “part Irish Country House kitchen, part Italian fifties Bistro” in a nod to Conor’s Irish roots and approach to hospitality. Warm woods, beautiful marble and carefully chosen art will add character to the space. Burro encompasses a bar, restaurant and an ample terrace, truly a restaurant for all seasons.
