Mitchells & Butlers’ premium casual dining brand, Browns Brasserie and Bar, will open a new site in Bushey, Hertfordshire on Friday 28th November, bringing the estate up to 28 locations nationwide.

Located on High Road, the new opening is part of Browns’ on-going strategy to grow its suburban footprint, introducing the brand’s trademark combination of modern British dining, cocktails and relaxed all-day hospitality to new neighbourhoods.
Housed within a Grade II listed building dating back to the 1600s, the site has undergone a sympathetic £1.7million refurbishment. The design blends period features with Browns contemporary aesthetic, featuring wall panelling with marble and brass finishes, blended with rich fabrics and finished with a statement baby grand piano.
The restaurant will reopen in time for the brand’s festive menu launch, with dishes including Traditional Oak Smoked Salmon, Maple & Cinnamon Glazed Pork Belly, Braised Blade of Beef and a Christmas Pudding. Browns Bushey will serve breakfast through to dinner, with all menus focused on British seasonal dining. A daily brunch will be on offer with a British afternoon tea will be served Monday to Saturday from 3pm-5pm. Sundays will feature premium roast, including a selection of sharing joints.
The drinks list includes Champagne cocktails, contemporary twists on classics, a curated wine list and premium no- and low-alcohol options. There are also a variety of vegan and vegetarian options and a gluten-free menu accredited by Coeliac UK.
Dave Lewis, Operations Director comments: “Bushey marks an important step in our strategy to grow Browns’ presence in suburban locations where we see strong demand for premium all-day dining on the high street. We’ve invested carefully in restoring this historic building and we’re looking forward to becoming part of the local community as we continue to expand the brand in key neighbourhood markets.”
Browns currently operates 28 restaurants across the UK including London, Bath, Birmingham, Bristol, Manchester, Leeds, Liverpool, Sheffield, Edinburgh and Glasgow. Bushey marks the brand’s first opening in Hertfordshire.
