LIMA Fitzrovia Welcomes Diego Recarte as Head Chef and Unveils a Refined New Menu

LIMA, a pioneer of Peruvian dining in London, enters a new era with the appointment of Diego Recarte as Head Chef. Since opening its doors in 2012, LIMA has introduced Londoners to the vibrancy of Peru’s cuisine, creating a reputation for its authenticity, quality, and creativity. Now, with Peruvian-born Diego (ex-D.O.M., Enigma, Le Calandre) at the helm in the kitchen, the restaurant unveils a refreshed menu launching Monday 13 October, one that honours its legacy while bringing a refreshing take on Peruvian gastronomy.

Founded by brothers Gabriel and José Luís Gonzalez, LIMA is one of the first restaurants to bring modern, refined Peruvian cuisine to London. Their approach, in combining traditional Peruvian cuisine with innovative, exciting takes, captures the energy of Peru in a way that resonates with a cosmopolitan city. Quickly becoming a leader for Latin American dining in the UK, and awarded a Michelin star between 2013 and 2018, LIMA helped London discover Peru as one of the world’s most exciting and celebrated culinary destinations. Today, with three locations across the capital, their focus remains on welcoming both lovers and newcomers to Peruvian cuisine with warmth.

Diego’s arrival marks the beginning of a new chapter for the restaurant. Born in Peru, his passion for food began in his home, surrounded by the flavours and traditions of his heritage. After formal training at the Instituto Argentino de Gastronomía in Buenos Aires and the Italian Culinary Institute for Foreigners, Diego refined his craft in some of the world’s most acclaimed kitchens, including Astrid y Gastón in Lima, D.O.M. in São Paulo, Enigma and Pakta in Barcelona, and the three-Michelin-starred Le Calandre in Italy, as well as projects across Singapore, Doha, and Bali. Diego has also thrived during residencies at Bar Brutal (Barcelona), Fulgurance (Paris), Opera (Rodez), Bar Chenin (Bangkok), Llama Inn (Madrid), Cap Karoso (Sumba), among others. This international experience has shaped a precise and refined style that is rooted in his Peruvian identity.

“For me, cooking is about storytelling,” says Diego. “At LIMA, I want the new menu to put Peru’s incredible flavours and ingredients at the forefront, while also bringing something fresh and modern to the table for London diners. The dishes are honest, full of character, and offer something new and enticing.”

Diego’s debut menu blends iconic Peruvian dishes with the influences and techniques he has gathered throughout his career. Highlights include A5 Wagyu Tiradito with Crispy Potato and Ají Panca, and St Austell Bay Mussels on Toast with Oyster Mayo and Guanciale. A Causa – one of Peru’s most recognisable dishes – is reimagined with Cornish White Crab, Avocado and Curled Endive Salad, while Isle of Skye Scallops are served with Beef Fat Persillade and Seasonal Greens. A Classic Ceviche showcases the bold, bright flavours of Peru, while Lomo Saltado offers a comforting, hearty take on a national favourite. For larger plates, guests can enjoy Cornish Octopus with Kimchi and Confit Potatoes, Catch of the Day with Preserved Candied Tomato and Almond Cream, or Ibérico Pluma with Roasted Summer Cabbage and Plum Chimichurri.

Staying true to LIMA’s ethos, the menu celebrates seasonality and sustainability, with produce sourced directly from both Peruvian growers and trusted British suppliers. The drinks list complements this philosophy, championing pisco-led cocktails, seasonal spritzes, and a carefully curated wine list designed to pair with the bold flavours of the kitchen.
“From the beginning, we wanted LIMA to be about more than just food; it was about sharing Peru’s culture, spirit, and energy with London,” says founder Gabriel Gonzalez. “With Diego leading the kitchen, we’re stepping into an exciting new phase that honours that original vision while embracing his fresh ideas and innovation.”
With over a decade of success behind it and a renewed vision for the future, LIMA continues to champion Peruvian gastronomy in London. Under Diego’s creative direction, the restaurant enters its next chapter, one shaped by his leadership, continued dedication to quality, and a menu that brings a fresh perspective to Peruvian dining in London.
