Jumeirah Carlton Tower appoints Mario Perera as its new Executive Chef. With more than 30 years of culinary excellence across some of the world’s most prestigious hotels, Perera brings deep expertise, creative flair, and a proven track record of leading award -winning kitchens.

Mario joins Jumeirah Carlton Tower following his role as Executive Chef at The Dorchester, where he led a team of 80 chefs across multiple outlets, engineered award -winning seasonal menus, and championed sustainability initiatives that significantly reduce d food waste. His dedication to mentoring young talent and collaborating with leading culinary organisations, including the Royal Academy of Culinary Arts and Young Chef Olympiad, has cemented his reputation as both a visionary leader and an educator.
Throughout his distinguished career, Mario has held senior roles at The Dorchester and Four Seasons London, as well as working closely with Royal households and executing prestigious state banquets at Windsor Castle and Buckingham Palace. His diverse experience spans fine dining, large -scale banqueting, private catering, and menu innovation across global cuisines.
In his new role, Mario will lead all culinary operations at Jumeirah Carlton Tower, bringing his passion for seasonality, innovative dining concepts, and world-class hospitality to elevate the guest experience.
