This November, Number Eight Sevenoaks will host a truly special dining experience: celebrated chefs Tom Anglesea and Stuart Gillies cooking together for the first time in 20 years.

Taking place on Thursday 6th November, guests will enjoy a four-course menu that celebrates the extraordinary local produce of Kent, brought to life through the creativity and pedigree of two chefs whose careers have spanned the globe.
Tom’s journey began with a stage at Gordon Ramsay’s Boxwood Café, working under Stuart Gillies, who would later become MD and then CEO of the Ramsay empire. Boxwood provided a foundation for his cooking, and it was Stuart who later helped him make the leap to New York. What was first intended to be a role at Soho House instead led Tom to join the team at Per Se, where he honed his craft at one of the world’s most acclaimed restaurants.
Since then, Tom has carved out his own distinctive path, showcasing his flair for modern, globally inspired cooking. He went on to make his mark at The Laughing Heart in Hackney, before taking up his current role leading the kitchen at Dovetale in London.
Stuart Gillies, owner of Number Eight, has spent over 30 years in some of the world’s most prestigious kitchens. His career spans Michelin-starred restaurants in Italy, Sweden and New York, as well as London icons including Le Caprice and The Connaught. As Chef Patron of Gordon Ramsay’s Boxwood Café and later CEO of the Gordon Ramsay Group, he oversaw restaurants across the globe while becoming a familiar face on shows such as Great British Menu and Saturday Kitchen. Today, Stuart’s focus is closer to home with Bank House in Chislehurst and Number Eight in Sevenoaks.
