The Return of Carlo Scotto: BEAR Marks the Chef’s Most Ambitious Culinary Venture Yet

After much anticipation, Carlo Scotto has confirmed the opening of BEAR by Carlo Scotto, his most ambitious project to date. Opening on 15th October in Beaconsfield and now taking reservations, the restaurant places two distinctive elements at its core: a menu that showcases an extraordinary commitment to foraged British ingredients, and an intimate 14-cover chef’s table where every seat is a front-row experience.

Carlo earned rave reviews and widespread acclaim at Amethyst where his boundary-defying tasting menus established him as one of the most original voices in modern dining. At BEAR, he unveils a sharper, more elevated expression of his signature style. The spotlight is firmly on British ingredients with around half foraged daily from the Chiltern Hills and local woods – a rare and genuine commitment that redefines the farm-to-fork experience.

Diners will enjoy cocktails and canapés in the intimate lounge bar before taking a front row seat at the chef’s table where Carlo and his team will interact and engage with every diner, creating a rare sense of connection between chef and guest.

Over the past two years, Carlo has stepped back from the pass to reset, research and reignite his creative fire. The result is an ever-evolving tasting menu rooted in the British landscape yet influenced by Europe, Asia and the Middle East, designed to provoke and surprise through an interplay of technique and terroir.

Dishes include Ike Jime Chalk Stream Trout with wild sea beets, green walnuts and ardbeg; Miso Glazed Duck with blue moon radish, girolles, damsons and umeshu jus, and Caramelised French Toast with St Helena, meadowsweet and Beaconsfield truffle honey.

BEAR marks a bold new culinary chapter for Carlo: a restaurant defined by foraging, storytelling, and an immersive chef’s table that brings diners closer to the creative process than ever before.
