From Avocado Croast to Courgette Flowers: The Breakfast Everyone’s Talking About

There’s a definite buzz about breakfast at Pavyllon London, the Mayfair restaurant from world-renowned Michelin-starred chef, Yannick Alléno. Chef Sian Almond — recently appointed Director of Breakfast — is redefining the most important meal of the day with her meticulously crafted yet playful dishes.

With breakfast now the fastest-growing dining occasion in the UK — with a 13.7% year-on-year rise according to Kantar* — Sian’s dishes are capturing the imagination of diners and critics alike, including her Avocado Croast, Arabic Omelette, Matcha Pancakes and Mayfair Muffin (a riff on that fast-food favourite). Translating their brilliance from the plate to social media feeds, several dishes have clocked up millions of views already. In just two months, breakfast bookings from external guests at the restaurant (located within Four Seasons Hotel London at Park Lane) have surged by 55% — a testament to the creativity, skill and theatre that characterise mornings at Pavyllon London.

Sian’s menu blends Parisian elegance, London style and her own Australian brunch sensibilities with diners pulling up a chair at the restaurant’s counter to watch her in action. Highlights on the menu include:

 

  • Arabic Omelette – a vibrant layering of herbs, labneh, sumac and spicy sauce – a dish that’s amassed 18 million views worldwide on Instagram
  • Avocado Croast – a witty reinvention of the brunch classic, swapping sourdough for a buttery croissant base, crowned with guacamole, poached egg, rocket and shaved Parmesan – with over 1 million views on Instagram and 800 sold this year already
  • Matcha Pancakes – cloud-soft stacks dressed with matcha cream, Genmaicha syrup and glossy blueberry compote
  • The Mayfair Muffin – a witty high-low dish with Cumberland sausage, cheddar and rich yolk egg
  • Flower Bagel – a courgette flower-wrapped poached egg with smoked salmon – as beautiful as it is delicious

Due to this rising demand for breakfast, the Pavyllon London team has also launched a ‘weekly chefs special’ — initially a social media concept that gained immediate traction and now a regular feature. Recent viral specials have included the ‘Heart of Italy’ pan-fried pizza with tomato and burrata and the delicately spiced ‘Turkish Eggs’.
