This September, The Aubrey, the celebrated Japanese izakaya nestled within Mandarin Oriental Hyde Park London, is proud to announce its inaugural guest chef takeover series “Youkoso”. In Japanese, youkoso means ‘welcome,’ a sentiment that perfectly captures the spirit of this all-female line up as The Aubrey opens its kitchen to these three visionary cooks.

Paying homage to the spirit of Aubrey Beardsley’s obsession with Japonism and Maximal Concepts’ penchant for artful dining, the “Youkoso” series celebrates heartfelt hospitality and the vibrant stories of three talented female chefs. The programme begins with the acclaimed Burmese supper club hosts, The Rangoon Sisters, followed by Macanese cuisine specialist Ana Da Costa, founder of FAT TEA, culminating with award-winning Malaysian-Scottish chef and author Julie Lin.
The chefs will each present a multi-course menu inspired by their personal history and cultural traditions, reflecting a shared philosophy of creative, nostalgic cooking. The menus, priced at £80 per person, will be complemented by a welcome drink crafted by The Aubrey’s award-winning mixology team. Each cocktail is a bespoke creation, inspired by the chefs’ childhood memories and flavours.
Meet the Chefs
The Rangoon Sisters | September 8th & 9th
First up are Amy and Emily Chung, the doctors-by-day behind the famed East London Burmese supper club. Their menu is a nostalgic journey through their upbringing, featuring a selection of beloved dishes. Highlights include Balachuang butter with The Aubrey shokupan bread, Burmese spicy fried chicken and Dawei ceviche, and a sweet coconut milk and tapioca dessert to finish.
Ana Da Costa | October 6th & 7th
In October, Ana Da Costa of the supper club, FAT TEA, will showcase her aromatic Macanese cuisine. Her menu is a tapestry of bold flavours and textures, featuring dishes like Aubergine Sambal and skewers of Capela with soy cured yolk. The menu will be served family style, encouraging guests to share, dip, and explore Macanese flavours.
Julie Lin | November 3rd & 4th
Concluding the series is Julie Lin, the Malaysian-Scottish chef and author of the chart-topping cookbook ‘Sama Sama’. Her menu taps into the transformative power of food to evoke memories. Guests will enjoy flavours from a textured Southeast Asian salad Rojak to Curry Leaf Chicken with butter sauce and salted egg yolk, and Julie’s take on Chocolate mousse with Sichuan peppercorns.
