This June, Stan Wróblicki, Sous Chef at two Michelin star The Clove Club, moves across to Isaac McHale’s second restaurant, to head up the kitchen at Bar Valette. Wróblicki will be applying his technical skills and deep respect for the provenance of ingredients to his Head Chef role, just a stone’s throw from The Clove Club on Kingsland Road. Fresh from a research trip around the Basque region, Wróblicki will take this exciting succession period as an opportunity to cook delicious food with premium produce but with a focus on simplicity, flavour and precision.

Stan Wróblicki entered the world of Michelin-starred dining in 2014, with formative stints at Pollen Street Social, Dabbous, and Pure C in the Netherlands. He joined The Clove Club in 2017 and spent eight years rising through the ranks to Sous Chef. In 2021, he completed a six week long stage at Noma in Copenhagen, further deepening his appreciation for clean, seasonal cooking driven by exceptional produce. Originally from Warsaw, Stan moved to the UK over a decade ago, drawn by the opportunity to learn and grow in world-class kitchens. Taking over from Erin Jackson Yates, Roux Scholar finalist and short listed name on the National Restaurant Awards ‘Chef to Watch’ list, he is excited by the creative license that comes along with his first head chef role and is committed to evolving the menu with intention and care, as overseen by Chef Owner Isaac McHale.
