This month, Veraz, the signature restaurant at The Barcelona EDITION, continues its long-standing collaboration with Young Chef 2024 award-winner Martina Puigvert, unveiling exciting new additions to its four- and six-course tasting menus.
This latest menu reinforces the dynamic partnership between Veraz and Puigvert, further solidifying the restaurant’s commitment to innovation while staying true to its roots in locally sourced, seasonal ingredients.
Puigvert, from the esteemed Les Cols Restaurant—holder of 2 Michelin Stars, a Green Star, and 3 Soles from the Repsol Guide—has infused Veraz with her poetic and ingredient-driven approach since launching their collaboration in February 2024. Focused on untraveled seasonal ingredients and sustainability, her dishes present an honest journey of sensations, emphasising simplicity, locality, and purity. The partnership between Puigvert and Veraz celebrates a shared philosophy of respecting seasonality, elevating regional flavours, and reinterpreting traditional products with modern creativity.
The updated menu introduces exquisite new appetizers, including charcoal tempura calçots and lettuce with mustard, inspired by the rich culinary traditions of her native La Garrotxa. The experience concludes with a selection of nature-inspired petit fours, featuring a delicate fennel macaron and an aromatic eucalyptus gummy, offering a refined and memorable finale.
These additions join an already exquisite lineup of dishes that celebrate the essence of seasonal and locally sourced ingredients. To mark the extension of this collaboration, Martina has previously introduced four standout dishes to Veraz’s autumn menu, which continue to delight guests. Highlights include A Flower of Time, an elegant composition of artichoke, bread, and mint royale; From the Henhouse to the Plate, showcasing a fresh egg of the day with raw and cooked boletus; and De Agua Dulce, a refined mille-feuille of river trout, acorn ham, consommé, and garlic flower. Each dish reflects Puigvert’s signature balance of tradition and creativity, reinforcing Veraz’s position as a must-visit dining destination.
