Hitchin-based Hospitality and Catering students recently took over the kitchen at Knebworth Golf Club for their Captain’s Dinner fundraising event.
The golf Captain’s charity of choice was Young Lives VS Cancer, which aims to raise money for young people suffering from this illness, as well as their families.
Over the course of the evening, students from North Hertfordshire College cooked and served a fine-dining menu for 132 guests, featuring ingredients sponsored by Riso Gallo, an organisation which often works with the College.
Under the guidance of the North Hertfordshire College Hospitality and Catering staff, Craft Guild Chef Lecturer of the Year, Anthony Gascoigne, commercial manager in Hospitality and Catering, Dave Brett-Lavelle, and Catering lecturer, Donna Ryan – Catering students customised their planned dishes to cater for any dietary requirement, ensuring that every guest could enjoy the courses on offer.
This learning opportunity allowed both Catering and Hospitality students to get a taste of catering at scale for a luxury event, adding to the list of real-life work experience they’ve gained during their time at college and demonstrating that they can fully deliver any type of brief.
Both front-of-house, and kitchen-based students received positive feedback, with one of North Hertfordshire College’s budding-chefs receiving a job offer from Knebworth Golf Course as a result.
Emma Brooke, the club operations manager at Knebworth Golf Club, said: “Thank you for an incredible night! It was very well received and a real success. A big thank you to Anthony, Dave, Donna, and especially all the students. We eagerly anticipate working with you again.”
Kacper Rudzinski, level three chef at North Hertfordshire College, commented: “It was a fantastic opportunity to take over the kitchen at Knebworth Golf Club. We served delicious food and successfully raised funds for the Young Lives vs Cancer charity. I am also pleased to share that I received a job offer to work as a chef at Knebworth Golf Course.
“This experience has been immensely rewarding, and I am grateful for the chance to support a great cause while having the opportunity to learn in a fast-paced environment.”

Young Lives vs Cancer helps children and young people (0-25) and their families find the strength to face whatever cancer throws at them.
They work hard to make sure each family has what they need to get through cancer. It could be a financial grant for a parent struggling to keep their child warm through their treatment or for a young person who can’t afford to get to hospital.
