One of Scotland’s top golf resorts and country estates in Edinburgh, Dalmahoy Hotel & Country Club has appointed a new Executive Chef Andy McQueen.
With an illustrious career in hospitality spanning more than 30 years. McQueen started his career after training at Surrey’s prestigious Wentworth Golf Club, home of the PGA then progressing to a series of senior Head Chef positions at Crieff Hydro Hotel, Radisson Collection, Malmaison, Sheraton, Carnoustie Golf Course Hotel & Resort, Macdonald Hotels & Resorts and now Dalmahoy. He has also been part of a team that cooked for the Royal Family at Holyrood Palace and has catered for many high profile celebrities during his career.
McQueen’s culinary flair is based on creating novel dishes that are fresh and inspired by the season with an emphasis on using the finest locally-sourced ingredients and suppliers to maximise flavours.
This is in-keeping with Dalmahoy’s signature restaurant The Pentland, which celebrates the very best of Scotland’s larder – including fresh produce from the kitchen garden. Enjoying sensational views over the golf course and estate grounds, The Pentland offers a rich and immersive yet relaxed fine dining experience.
Testament to McQueen’s approach to seasonal dishes, menus will be updated four times a year. Although, there will be daily specials where he will encourage his team to apply their creativity and essentially go off-piste with interesting and creative executions of their own culinary ideas.
Available from October 2022, menu highlights include a pan-roasted seasonal loin of Venison with black pudding and potato terrine with a Swiss chard & sherry vinegar jus and heritage beetroot, goats cheese & black olive. Fresh from the sea, the Wild Halibut poached in milk with courgette spaghettini & mushroom fish velouté is a particular specialty.
To complement the fine dining restaurant, the Brasserie at Dalmahoy offers a more contemporary, casual and family-friendly experience with expansive bay windows, comfy sofas, stools and armchairs where you can relax. The new menu here is a celebration of home-made favourites including (few example dishes here please) with tailored kids’ menus catering for the little ones up to teens.
Commenting on his appointment, Andy McQueen, Executive Chef, said: “I’m delighted to join Dalmahoy Hotel & Country Club as Executive Chef. The resort is recognised for its fantastic accommodation, golf and leisure facilities but we’re focusing on putting Dalmahoy firmly on the map as a destination for upmarket fine dining complemented by casual brasserie dining and great quality restaurant food for banqueting with no compromise.
“Our focus on fresh, light flavours and seasonal ingredients will perfectly showcase Scotland’s world-class ingredients in both The Pentland restaurant and Brasserie.
“It’s no secret that the labour market continues to be tricky sometimes, it’s a problem faced by the entire industry, but we’re in a good position. It’s an exciting time to join Dalmahoy, there’s an established team here, and we’ve just launched an apprenticeship scheme whereby we are working with local colleges to identify new talent and train them up to chef standards.”
The new menus Dalmahoy Hotel & Country Club will be available from October. Opening hours for dining: breakfast 7am to 11pm; lunch midday to 2pm; Afternoon Tea 2-4pm and Dinner 5pm to 9.30pm.
