Corinthia London has launched this season’s afternoon tea in the hotel’s Crystal Moon Lounge, from newly appointed Executive Pastry Chef Yago Arias Doamo.
Masterminded by Yago, in collaboration with Executive Chef André Garrett, the various seasonal afternoon tea options offer guests a mix of classic and contemporary delicacies – from the Traditional Afternoon Tea to the Champagne Afternoon Tea with a glass of Laurent-Perrier La Cuvée Brut Champagne, and the Caviar Afternoon Tea with Champagne.
The range of finger sandwiches includes…
- Pickled cucumber with goat’s curd and mint
- Smoked salmon and horseradish crème fraiche
- Honey-roast Wiltshire ham with Dijon mustard and watercress
- Coronation chicken and gem lettuce on onion bread
- Clarence Court egg mayonnaise with truffle on brioche
Warm plain and sultana scones are served with Cornish clotted cream and a Rhubarb and Litsea Cubeba jam.
Pastries and cakes are always a highlight, and the new signature selection includes Yogurt and raspberry frangipane tart; Pistachio and apricot gâteau; Mascarpone and Bourbon vanilla Saint Honoré; and Milk chocolate mousse with lemon and hazelnut. Additional treats from the Afternoon Tea Trolley include Lemon drizzle cake, Coconut truffles, and Vanilla and Rose marshmallows.
Yago Arias Doamo’s appointment marks a return for him to Corinthia London, where he spent three years following his move from his native Spain, joining the pastry team in 2012 as Demi Chef de Partie, progressing to Junior Sous Chef. He then moved to Hotel Café Royal as Sous Chef (pastry) in 2016, followed by his most recent role at Claridge’s, which he joined as Sous Chef in 2016, rising to Head Pastry Chef in 2018, and then to Executive Pastry Chef in 2021.
From 2-5 June 2022, Corinthia will showcase a Jubilee Afternoon Tea. In addition to the classic selection of finger sandwiches, savouries will include Mini brioche rolls with crayfish cocktail, and Quiche Lorraine. As well as scones, special Jubilee cakes will include an Elderflower Battenberg; Mint and chocolate Palet d’Argent; and a Victoria Sponge Gugelhupf.
