How many catering colleges in the UK have a training restaurant attached for students to practice cooking and the art of service?
A good question asked on twitter by Fred Sirieix, and as he tagged us on the question, we got to see the answers, all 213 of them to date.
The answers point to a dilemma, an imbalance between the incredible passion and enthusiasm for training restaurants in catering colleges across the UK, and the steep decline of them.
The best answer to Monsieur Sirieix’s question so far was from Sue Kenyon, Executive Director of the Professional Association for Catering Education. Kenyon’s reply read starkly: “Where there were 450, we now have 180.”
At a time when hospitality and catering more than ever needs to train, develop and nurture young people to develop a career in our industry, this imbalance needs to be addressed urgently.
