The Bourbon, mixing East London attitude with soul

The mother and son team behind a string of London pubs including The Angel of Bow, Odette and Dominic Gibson, are set to open The Bourbon in Bow this week.

The pair have transformed the site of an old Italian restaurant on the Roman Road into an atmospheric Stateside-dive-bar mixed with added East London attitude. The neighbourhood bar will feature a backbar filled with rare bourbons, smokehouse barbecue dishes and a soundtrack that’s all about soul.

Set to open this week, the bar by Victoria Park will open until 11pm Wednesday to Sunday and boast more than 40 bourbons – including some rare 23-year-old finds such as George T Stagg 2019, Van Winkle 12 and Pappy Van Winkle 23. Cocktails, wine and American beers including cult favourites Pabst Blue Ribbon and Oskar Blues will also feature.

Ex-Ivy sous chef Sam Gordon will run the kitchen, focusing on smokehouse-style barbecue dishes inspired by his years spent working his way across some of Australia’s coolest bourbon bars including Varnish in Perth which has won numerous awards including Best Bar Food and Bar of the Year at the Australian Bartender Magazine Awards.

Apart from the buns, supplied by Paul Rhodes Bakery, everything else will be made in-house. Vegan and veggie options are sure to be just as sought-after as the melt-in-the-mouth brisket, ribs and burnt ends. Look out too for Sam’s homemade sauces, including paprika aioli, available by the bottle to take home.

The eclectic interior will feature speakeasy-style red pendant lights sitting above the long bar, exposed brick, and graffiti and bold street-art of some of the soul greats – Al Green, Ray Charles and Billie Holiday.

Co-owner Odette Gibson said: “East London’s certainly got its fair share of old-school dive bars, but with our focus on bourbon and bar food that is worth the hype, you might plan on ‘stopping-by’, but you’ll stay for the whole night.”

The Bourbon will open with a soft launch from 15th September.
