After launching its 1kg pouches to the hospitality and foodservice sectors earlier this summer, innovative natural sugar company Bonraw has linked up with cocktail queen Kat Stanley-Whyte from UnoMas in Edinburgh to give them a test run in a few classic drinks.

Kat poured her first cocktail in a backpackers nightclub in Melbourne and never looked back working for the likes of the Basement Bar and for Signature Pubs, where she curated drink menus for the group. She joined her friend and mixologist Sian Buchan to open Edinburgh’s latest late night, live music venue UnoMas (www.unomasbar.co.uk) with a focus on reinvented classics in March 2020.
Recently, she’s gone on to win the UK slot for the Altos Tahona Society Global Finals in Mexico and was the winner of the Ocho Tequilas 2021 Take Me To Mexico competition.

Kat said: “Incredible flavours and paired perfectly with a Pina Colada. I used both a 1:1 sugar to H2O ratio and 2:1. It definitely had a better texture with the thicker syrup. I also mixed coconut shavings with the sugar for rimming the glass and it was utterly delicious.”

Blend with crushed ice
Hurricane Glass or Similar
Garnish with Coconut shavings + Coconut sugar mix glass rim, Pineapple leaf + Caramelised pineapple cube.

Kat says: “Gorgeous caramel notes with this one, perfect for using with old fashioned style cocktails with a whisky or rye and mezcal margaritas. Truly brings out the flavours in the spirits. Additionally for caramelising garnishes it works wonders. I went a little heavier with this and used a 2:1 ratio.”

Bonraw Silverbirch – Kat says: “A great replacement for the classic cane sugar usually used for simple syrup. 1:1 ratio worked really well and it feels a little softer than the classic cane sugar syrup.”
