First organised by the Chaîne des Rôtisseurs in Switzerland in 1977, this year’s winner is a young chef who has spent the last three years working at The Clink Restaurant.
Ellie Shaw, 23, originally from Stoke on Trent and with a first-class degree in culinary art from the University of West London, is Sous Chef Trainer at The Clink Restaurant, HMP Brixton.
Remarkably this was the first competition that Ellie had ever entered. Speaking after being crowned the Chaine des Rotisseurs Young Chef of the Year 2020 told us: “I was happy just to be selected for the final, and was definitely not expecting to win the actual title.
To do that, back in March, she and two other chef finalists battled it out to create and present a three-course menu from a mystery box of ingredients.
Her show-stopping combination of dishes, cooked from memory, were:
- Grilled trout with rillette, crème fraiche, apple and dill oil
- Steak and oyster mushroom pie, caramelised shallots, Savoy cabbage, sage potato tuille & beer sauce
- Apple and ginger crumble, poached rhubarb and orange Chantilly
Shaw explained her menu saying: “When creating this mystery menu, I decided to stick to what I knew, and not overcomplicate anything. So I concentrated on British classics that diners would order in a restaurant.
Beating off stiff competition from Eden Allsworth of Cliveden (silver) and Liam Stofer of Mosimanns (Highly Commended), this golden girl will now go on to represent Great Britain in the Chaine’s World Championships in France next September.
Congratulations to Mélania Battiston, Medlar Restaurant, who won the “Gerard Basset Tasting Trophy” at The Chaine des Rotisseurs ‘UK Young Sommelier Competition 2020’.
Christopher Moore, CEO of The Clink Charity was delighted and told us: “We are absolutely delighted that Ellie has won the Chaine des Rotisseurs Young Chef of the Year 2020 competition. I would also like to congratulate Eden and Liam for achieving a place in the finals. When you get to this level they are all winners and our industry’s future. Our students were so pleased, too, to hear about this Award to Ellie, and feel very proud that she is training them to gain skills to pass their City and Guilds National Vocational Qualifications in Food Preparation and Cookery.”
The awards lunch took place at Penny Hill Park.
