Lawrence McCarthy has been appointed as Head Chef at The Salt Room Brighton, formerly of two Michelin-starred Marcus Wareing at the Berkley. As well as the experience at Marcus Wareing at the Berkley, McCarthy has a wealth of experience with six years at The Ledbury under Brett Graham, and most recently head chef at Michelin starred Tristan’s in Horsham.
Located on the Brighton seafront, The Salt Room will continue championing the best of local produce and British seafood – but with a new emphasis on delivering precise cooking, presented elegantly and simply which showcases more overlooked ingredients in a new and innovative way.
McCarthy commented on his appointment saying: “Cooking for me is all about simplicity. The simple pleasure of eating well sourced and quality ingredients is what The Salt Room is all about and I am really excited to be leading this kitchen.
McCarthy’s new menus will be available at The Salt Room Brighton from Thursday 20th February.
