Due Camini restaurant, Borgo Egnazia, Puglia is delighted to receive their first Michelin Star.
Executive Chef Domingo Schingaro creates Mediterranean dishes inspired by traditional Apulian cuisine. He uses a wide range of local produce, including 30 different varieties of tomatoes, 10 different kinds of artichokes and 8 different types of chicory. The raw ingredients used are carefully selected and passionately researched to enhance the flavours. Almost all the produce is sourced locally including fish from the Adriatic Sea, wild herbs growing in the countryside and local Apulian meat.
Chef Domingo reinterprets typical Apulian street food into his signature dishes such as ‘Lamb entrails rolls, lampascioni onion and chicory’; ‘Ricotta cheese, barley, wild herbs and fig vincotto’ and ‘Turnip tagliatelle, caper flavoured water, pine nuts, raisins and wild fennel’. Featuring a brand-new kitchen complete with a chef’s table – Due Camini welcomes guests to a delicious culinary experience.
