Sir Joan, the recently opened 5-star property by Sir Hotels, launches a special off-season collaboration with Chef Boris Buono of Ibiza Food Studio, the former Chef of Michelin starred Danish restaurant, Noma. Taking over the entire ground floor area of the hotel from December 1st, Buono brings his fine dining expertise and unique gastronomic style to Sir Joan.
Featuring a changing a la carte menu each week from Tuesday-Sunday for breakfast, lunch and dinner, the collaboration builds on Buono’s typical communal eating style and holds nightly events alongside the food. On Tuesdays and Wednesdays lectures by different local creatives, including renowned chefs, food industry members, artists and more will take place in the space. Thursdays are reserved for drinking, with various wine, liquor or digestive tastings taking place, and on Friday evenings local live bands are invited to play in an Italian style after work aperitivo and bites. Each Friday and Saturday night, Chef Buono creates a full tasting menu experience at 95 euros per person, in which he personally explains each dish and describes its origins and producers. In true Ibizan style, these signature Buono-style dinners will be accompanied by a live DJ. Brunch will be served on the weekends and Sunday evening will feature a cosy Sunday Roast.
The food served reflects Buono’s signature inventive naturalistic style, which is characterised by typical Mediterranean produce and locally sourced meats and fish. Each day four starters, four main courses and a selection of desserts and Ibicenco cheeses will be offered. In line with the philosophy ingrained in Buono’s two Ibiza restaurants, Ibiza Food Studio in Ibiza Town and La Finca (the farm), located in the north of the Island, the menu will be fluid, changing slightly based on daily fresh produce availability. The food is inspired by the local materials, building on traditional Mediterranean cuisine and adding a Nordic Kitchen twist. Dishes like Gambas Ibecencas, locally sourced prawns on saffron rice are served alongside more Danish influenced Flæskesteg which is a pork fillet served with potato puree, red cabbage and caramelised onions.
