The Seren Collection, a unique collection of high quality hospitality venues by the sea in South West Wales have announced that Tom Hine will take over as Head Chef at Coast Restaurant in Saundersfoot this October. Coast Restaurant is located on Coppet Hall Beach overlooking Carmarthen Bay within the stunning Pembrokeshire Coastal National Park.
Tom will take over the reins from current Head Chef Will Holland whose last supper will be on the 1st October. The restaurant will then reopen on Thursday 5th October with Tom at the helm. His arrival comes as further investment is planned for the restaurant in the Autumn and Winter, giving Tom the best possible start to his new adventure in Wales.
Padstow born and bred, Tom’s family are fishermen and so it is not surprising that he has a genuine passion for seafood. Tom started his career as a kitchen porter at Rick Stein’s renowned Seafood Restaurant in his home town. He quickly worked his way through the kitchen ranks and after five years joined Paul Ainsworth nearby as a Chef de Partie at Number 6. Since then Tom has continued to work in some of the best kitchens in the country both as a Sous Chef with Sam Moody at the Bath Priory and for the last eight years with his mentor Michael Caines, initially as a Sous Chef at Gidleigh Park and most recently as his Executive Head Chef at Lympstone Manor in Devon.
