Hyatt Regency London – The Churchill is delighted to announce the appointment of Mark Sainsbury to the position of Executive Chef, commencing 1 st August 2017. Mark looks forward to revitalizing Hyatt Regency London – The Churchill’s food & beverage offerings, namely The Montagu restaurant, The Churchill Bar & Terrace and the banqueting function that services the hotel’s eleven event spaces. He will especially become the “culinary face” of The Montagu restaurant, which serves breakfast, lunch and dinner, as well as boasting renowned weekend brunches, signature afternoon teas, a Cheese & Wine Corner in partnership with La Fromagerie and a Chef’s Table which gives up to nine diners a front row seat to The Montagu’s open kitchen.
Mark has a clear, British vision for The Montagu, taking inspiration from Winston Churchill’s love of fine food & his personal chef Georgina Landemare, whose dishes were often described as “inspired” and “beautifully presented”, as well as celebrating the quality of British farms, the value of local relationships and the UK’s seafood, from the “richest seas in the world”. Mark looks forward to further developing The Montagu’s relationships with these local suppliers and award-winning British farms, to ensure menus boast an array of fresh, seasonal and beautifully British dishes, crafted from carefully sourced British ingredients, supporting the restaurant’s farm-to-table ethos. A visit to La Fromagerie is first on Mark’s agenda to seasonally refresh the offering at The Montagu’s La Fromagerie Cheese & Wine Corner.

Having started his career in a family bakery, Mark’s passion for the hustle & bustle of the industry was born. Since this young age, Mark went on to build his culinary career in London, before migrating to Australia and joining the Hyatt family for the last 25 years. His journey with Hyatt has taken him from Perth in 1990, to Kolkata, New Delhi, Bali & Kuala Lumper, before returning to Melbourne, Australia and finally taking up his position as Executive Chef most recently at Hyatt Regency Perth.
