Those in the know may have already experienced The Dead Canary but Cardiff’s secret speak easy has turned to traditional Welsh fables to revolutionise its menu from June 22.
The menu is designed to take guests on a literary journey with the classic twelve Welsh myths and legends which make up the Mabinogion. The Dead Canary is using historical ingredients, medical remedies and herbs to carefully craft cocktails such as the First Prince and the White Dragon, to represent these literary tales in modern Welsh culture.
The Dead Canary’s new menu has been crafted by the whole team. General Manager Mark Holmes, said: “We’re completely in awe of how well the Dead Canary has been received in Cardiff and we are regularly full to capacity, especially on weekends hence why we want to shake things up and keep things interesting for our guests. This new menu has been a labour of love for the whole team, with our bartenders creating the drink recipes and another, Richard Gaskell, creating the incredible illustrations.
“We work with a very talented team, all of which are handpicked and they are one of the key reasons why we have continued to be a success. We all have a passion for delivering the best service and experiences for our customers by creating more than just drinks.”
The award-winning bar is set to take its cocktails to another level, having overhauled the entire cocktail list ready for the summer. The mythical inspired menu contains ‘chapters’ that make up groupings of cocktails with varying intensity throughout. The ‘Otherworld’ chapter for example contains a fair few fiery, strong drinks representing supernatural beings and elements. The bar will also be offering mocktails on the menu for the first time, as well as Welsh beers and ciders.
The Dead Canary, which originally launched in December 2015 with its prohibition theme, has the capacity to sit 100 people at any one time, but regularly receives bookings for 250 on weekends, proving its popularity with the local Cardiffians.
