Michelin star chef Marco D’Andrea takes up residency at Hideaway Beach Resort & Spa

Hideaway Beach Resort & Spa Maldives is excited to welcome German Michelin star chef Marco D’Andrea, who will be in-residence at the resort later this month for a twenty day period. Christoph Pentzlin, Hideaway’s executive chef, will be working alongside the celebrity chef to create a range of new exciting menus and experiences including a signature afternoon tea, a new desert journey and exclusively prepared 4 Hands eight course dinner menu.

Awarded Pâtissier of the Year 2014 in Germany, D’Andrea is best known for creating innovative desserts and sweet classics. His notable career has seen him work at a number of prestigious restaurants including Seven Seas at the Süllberg Hotel in Hamburg and the 3 Michelin star restaurant, Vendome in Bergisch-Gladbach, Germany. Marco will be in-residence from 22nd November to 12th December taking guests on an extraordinary culinary journey, with his delightful creations.

Marco and Christoph have combined their expertise and individual styles to develop an inspiring new menu, 4 Hands. Ensuring perfect pairings, the menu features an array of delectable starters, main courses, and deserts including ‘gin and tonic’ oysters, scallops with truffle and cauliflower, and rhubarb with peanut and ginger. The 4 Hands menu will be available to Hideaway’s guests at Samsara restaurant and Meeru Bar.

The award winning chefs also designed the Sweet Desires menu; a umami inspired menu with a delicate combination of sweet and savoury flavours. The complimenting ingredients feature frozen goats cheese, orange pepper and olive oil, in addition to shiso, apple, eucalyptus and avocado. The journey of Sweet Desires menu will be available at the Sunset restaurant.

Marco and Christoph have also created a signature afternoon tea experience which has been infused with a modern touch using savoury ingredients in the sweet items and sweet ingredients in the savoury items. The delightful take on the traditional afternoon tea includes matcha tea macaroons, eucalyptus cotton candy and Christoph’s signature scones with a choice of apricot and thyme jam, raspberry-basil jam or strawberry and tonka bean jam.

Available after the Sweet Desires and 4 Hand dinner menus will be hand crafted petit fours exclusively designed by Marco. The delicious creations will be served in a presentation box designed by the chef along with Zieher Company, promising to delight guests’ taste buds.

During his visit to Hideaway, Marco will also be sharing his culinary expertise with the resort’s chefs, training them to make the perfect sweet desserts including; macaroons, pralines and chocolate tarts.
