This month, Louisiana specialist Decatur is set to launch a series of monthly crawfish boils at Pamela, its new permanent home in Dalston. Beginning on Saturday 25th June, the boils will offer Londoners a chance to experience the proud New Orleans tradition of the backyard boil in true authentic style.
Just as they do in New Orleans, the Decatur crawfish boils at Pamela will be served family style, turned out of warm pots on to a long newspaper-covered table, piled high with crawfish, fresh corn on the cob, smoked sausage, boiled potatoes, and mushrooms. Guests will then gather round and get peeling, ideally with a few cold beers to cool the heat from the lip-tingling boil. Alongside this, will be warm garlic butter for dressing the crawfish and French loaves to tear into and soak up the juices.
“There is nothing that says you’re in Louisiana more than standing round a table heaving with freshly boiled craw-dads, sippin’ a few beers and letting the humid, heavy heat wash across you as the crawfish spices start to tingle on your lips. The flavours, communal nature, and fun of a boil perfectly capture Louisiana and that’s the vibe we want to bring to Pamela”, says Decatur founder Tom Browne.
Running from 1pm to 4pm on the last Saturday of every month, the crawfish will be served at regular intervals over the three hours meaning there’s plenty of time to get stuck in. Tickets will be available in advance at £35 and includes the boil plus dessert, a warm freshly-made beignet, stuffed with homemade ice cream.
As well as beers and wine, Pamela will also offer its menu of signature cocktails many of which are made with its own house-infused spirits. The Des Barres combines Jalepeno infused Eristoff with Kiwi Juice and Coconut Ice Cubes, whilst the Ol Grier mixes Passionfruit laced Bacardi with Cointreau and Prosecco.
