It was at the Red Caffe, a tiny student bar in the Campo Santa Margarita in the heart of the Dorsoduro district of Venice, that Russell Norman had a revelation. Standing at the bar lined with cool tattooed kids, drink in hand, and relishing what he calls ‘the greatest single slice of Venetian life’, he discovered the Spritz, and immediately knew that the signature aperitif at POLPO needed to be the Spritz.
“There, at the bar, with Spritz in hand, you can survey the greatest single slice of Venetian life you will get in one sitting. Forget St Mark’s Square, for all life is here,” says Russell.
POLPO now wants to transport you to summer evenings in Venice bringing Aperitivo Time to its bars this July. Deeply rooted in Venetian culture, as early evening draws in, the bars are filled with people unwinding with their favourite cocktail and a few snacks before they make their way home. Relaxing after work with good food, good drink and of course, good company, is central to the Aperitivo.
The daily Aperitivo Time at POLPO will offer the classic Aperol Spritz made using the same recipe as Venice’s Red Caffe, alongside Negronis and the Cynar Gin Fizz. Just as they do in Italy, drinks will be accompanied by snacks such as black truffle crisps, Bella di Cerignola olives and tuna & leek crostini.
