Healthy & refreshing summer salad – Put together in minutes
Serves 2 people
Ingredients
No need to use pestle and mortar
Dressing
- 1 clove garlic chopped
- 1 fresh red chilli or to taste
- 1 tbsp. fish sauce OR just use soy sauce for vegetarians
- 3 tbsp soya sauce
- 1 tbsp. palm sugar
- 3 tbsp. rapeseed oil
- 3 tbsp. lime juice
- Handful of fresh Thai basil
Salad
- 1 medium green papaya – shredded
- 6 cherry tomatoes cut into half
- 50g green beans – cut into 1-inch lengths balanced and refreshed in ice water
- 50g bean sprouts blanched in hot water and refreshed in ice water
- 3 spring onions, sliced very thinly
- 50g roasted peanuts crushed
- Few leafs thai basil for garnish
Method
- Make the dressing by putting all the ingredients into a food processor, whizz until all combined. Keep aside in a small Jar
- Place all the prepared vegetables in a container mixed well. Keep refrigerated until ready to take on your trip or just enjoying at home.
- When ready to eat pour the dressing over the vegetables, garnish with crushed peanut and thai basil.
