On Monday May 16th Ibercia Victoria’s Executive Chef Nacho Manzano is set to welcome one of Spain’s highest profile chefs into the kitchen for the restaurant’s first “Nacho & Friends” event.
Cooking in London for the first time, Spanish heavyweight Quique Dacosta will bring his style of cooking to Iberica which has seen him awarded three Michelin stars for his Quique Dacosta restaurant in Denia and one Michelin star at El Poblet in Valencia, with his eponymous restaurant named 39th in the Top 100 Restaurants in the World.
With seven Michelin stars between the two chefs, the event will see Nacho and Quique produce a casual tapas menu, serving seven courses and a desert with paired wines all for £60 per person.
Nacho’s menu for the evening includes:
- Sea urchins, served with cream, aromatic spices and yoghurt
- Soft Shell Crab
- Hake salad with hollandaise sauce and dried eggs
- Roasted apple with rosemary cream and cloud cider
Quique menu for the evening includes;
- Ashes rice (from Quique Dacosta’s menu in EL Poblet) crushed tomatoes (from his Quique Dacosta restaurant)
- Lemon Fish (from Quique’s casual restaurant Vuelve Carolina)
In addition, Quique will be performing a cooking demonstration at the Westminster Kingsway College on the 16th May.
After his appearance at Iberica, some of the tapas created by Quique will be available on the menu to allow guests the chance to enjoy his cooking for a bit longer.
Aside from his highly gastronomic and avant garde profile, Dacosta is considered a master in cooking rice and “paellas”, he has published several books around his traditional Spanish dish with “Arroces Contemporanoes” among those, considered the “rice Bible”.
Part of his cooking demonstration will flow around rice and the latest evolution on the “paellas”, such as the “Ashes rice” that will be part of the menu in the evening dinner at Iberica Victoria.
