With Finishing®, the SelfCookingCenter® 5 Senses offers the ideal solution in order to make á la carte service much more relaxed, whilst at the same time guaranteeing consistently high quality food. To do this, the dishes offered on the menu are initially precooked in the SelfCookingCenter® 5 Senses in preparation, chilled in the blast chiller, placed on plates or in containers and brought to serving temperature shortly before serving using Finishing®.
During the Finishing® process, the unique RATIONAL dew point control forms a protective film of microscopic drops of water perfectly distributed on the food. At the same time, this prevents the accumulation of condensation. This ensures that heat and humidity are perfectly distributed and automatically adjusted to the relevant food. As a result, after á la carte Finishing® in the SelfCookingCenter® 5 Senses the dishes will look and also taste freshly prepared. Because unlike holding, Finishing® preserves all the vitamins, colours and flavours.
On average, a-la-carte Finishing® takes around 8 minutes. Before serving, sauces and fresh herbs or garnishes are simply added to the plated dishes and the guest will receive an attractive and flavoursome meal without any quality losses.
