Westminster Kingsway students feature in a new Parmigiano Reggiano recipe book produced by the Consorzio Del Formaggio in partnership with the College.
Westminster Kingsway College chef lecturer Jose Souto explains the concept behind the project:
“The College works with leading food producers and organisations to teach our students about different products as part of their studies.
“We decided to run a student competition with Parmigiano Reggiano for our second year students where they would learn about the product first before developing their own recipes to submit for inclusion in a new recipe book.
“The final fifteen students’ recipes were selected to be made for a final judging panel. All of the finalists made it into the book with the winning student featured first. This was a great competition for our students from Westminster Kingsway College as they got to develop their own recipes, learn about the origins and flavours of a key ingredient and can now see their final creations being published.”
The final dishes in the Parmigiano Reggiano recipe book were styled by Westminster Kingsway College chef lecturers Jose Souto and Norman Fu and photographed by leading food photographer, Steve Lee.
College chef graduate Joshua Mills said: “Parmesan was a familiar ingredient but I learnt so much more about it. This competition taught me about the detail of recipes and designing a dish which was great.”
