The team at the soon-to-open Fonab Castle Hotel in Pitlochry, Perthshire, has appointed Head Chef Graham Harrower to run their Sandeman’s Fine Dining Restaurant and the more casual Fonab Brasserie.
With only weeks to go until the hotel’s much anticipated summer opening, Graham joins from five star resort, The Langdale Estate in the Lake District, where he headed up four restaurants and bars. He has previously worked in Scotland as a Commis Chef for Michelin-starred One Devonshire Gardens in Glasgow, and at Cromlix Country House Hotel (now owned by Scottish tennis ace Andy Murray) near Dunblane.
His first head chef appointment came in 2006 at Esperante Restaurant at The Fairmont St Andrews resort, following a stint as sous chef at Road Hole Grill at The Old Course Hotel and two years as senior chef de partie at Pompadour Restaurant at the Caledonian Hilton Hotel in Edinburgh.
Fonab Castle Hotel owner Joanne Clark said: “We’re delighted to appoint Graham who not only brings a wealth of experience to Fonab Castle, but whose Scottish roots have given him a real appreciation of the amazing produce we have right at our doorstep.
“We’re looking forward to see Graham’s love of fresh, Scottish food transformed into delicious menus for both Sandemans Fine Dining and Sandemans Brasserie. “
Nestled on the banks of Loch Faskally, Fonab Castle Hotel is set amidst breath taking highland scenery. The hotel has a total of 26 rooms, 13 of which are housed in the castle. Another 13 rooms, most of which have direct access to the lochside, are located in a tasteful modern addition.
Fonab Castle Hotel will also feature rustic, yet luxurious lodges and have private hot tubs within its extensive grounds.
