With the impressive prestige of being awarded a Michelin star before the age of 30, voted within the top ten of the most influential chefs by The Good Food Guide and ‘UK Restaurant Chef Of The Year’ by the Craft Guild of Chefs, Will Holland will bring with him to The Nai Harn his incredible wealth of experience that will further elevate the culinary delights of the popular luxury hotel.
Encompassing the very best of the hotel, Will Holland will expertly create a number of signature blackboard specials at Rock Salt, The Nai Harn’s stylish gourmet restaurant. With a menu that displays a fusion of world class food, his culinary talents will be displayed in combining the finest local ingredients topped with his personal and experienced culinary twist. Dishes will include torched wahoo mackerel served with salt baked beetroot and wasabi yoghurt, chargrilled prawns with black pepper and vanilla butter, papaya salad and spicy potatoes as well as the special guest beef burger made with sliced tomato, sliced avocado, crispy bacon, poached egg and chili jam. Guests of the hotel and local visitors will be able to tuck into these limited edition dishes with perfectly situated views across the popular bay.

Paired with a signature rum cocktail, guests can tuck into gourmet canapés including scotch quail’s eggs, charred aubergine and parmesan polenta with interrupted views over the southernmost point of Phuket.
Will Holland’s visit will complete with an exceptional curated six course degustation menu at Cosmo restaurant for a limited number of lucky attendees. Cosmo, an all-day dining destination that enables guests to choose from a lavish selection of Thai and international favourites will stage the exclusive gastronomic affair for one night only. Paired with exclusive wines, dishes will include scallop carpaccio with compressed cucumber, wasabi and watercress, quail with wild mushrooms, pink grapefruit confit, truffle dressing and king crab served with carrot, orange and vanilla puree, fennel salad and basil mayo.
To complement the illustrious food and stunning views, The Nai Harn has created one of the most prestigious drinks menus in Thailand, curated by one of the world’s most famous barmen, Salim Khoury, who was head mixologist for more than three decades at London’s Savoy Hotel where he ran the legendary American Bar. His signature cocktails include The Lady Nai Harn and The Rumble, as well as a new addition to the cocktail menu – The Frosé – ideal for cooling down amid rising temperatures.
