No.15 Great Pulteney, Bath’s newest boutique hotel, has announced the appointment of Dan Miles as Head Chef. The 29-year-old will bring his infectious enthusiasm for great-tasting simple food and locally-sourced ingredients to No.15 Great Pulteney, fresh from his most recent role as Sous Chef at The Gainsborough Bath Spa. Dan will take up the position on 23 February 2017.
Dan brings a wealth of experience to No.15. Before his role at The Gainsborough, Dan spent two years as Chef de Partie under Anthony Boyd at La Trompette, London, worked as a pastry chef under Alan Murchison at the Michelin-starred L’Ortolan in Reading and held Commis Chef and Junior Sous positions at the Michelin-starred Lucknam Park Hotel & Spa, near Bath. Dan began his career at Stapleford Park Hotel in his home county of Leicestershire.
“I am thrilled to be joining the team at No.15,” says Dan. “The hotel is one of the most exciting openings in Bath and the quirky yet relaxed atmosphere has so much to inspire new and exciting developments in the kitchen. I’m looking forward to creating simple, accessible, family-style sharing dishes that people really want to eat, using the best quality seasonal ingredients. I’ve got lots of ideas for what I want to do, so I can’t wait to get cracking!”
Throughout the course of his career Dan has developed a flair for honest yet vibrant food. Never shying away from fresh ideas and big flavours, Dan likes to take inspiration from his travels, food heroes and his immediate surroundings to inform his food. In his role at No.15, Dan will look to bring touches of Bath’s rich history and its great ‘loves’ – particularly rugby – into his dishes.
Guests at No.15 Great Pulteney can expect a constantly evolving menu that keeps pace with the very best of local, seasonal produce. Expect simple dishes with a playful twist, in keeping with No.15’s vivacious, curious spirit.
In Cafe 15, the hotel’s relaxed restaurant – open every day for breakfast, from Wednesday to Sunday for lunch, as well as Friday and Saturday evenings for dinner – each dish will be carefully created to let the quality of the ingredients shine, while also complementing its wonderfully unique surrounds. Expect to see the likes of poached cod with butter beans infused with chorizo and saffron with garlic aioli and smoked salt, beautiful Fowey mussels with leeks, cider and smoked bacon and super fresh salads such as shaved courgette with goat’s curd, watercress, pine nuts and a lemon dressing on the menu soon.
Upstairs in Bar 15, Dan will introduce delicious tapas-style dishes – such as as polenta chips with baba ganoush, dukka and Cambodian wedding day dip, Quail Scotch eggs with homemade ketchup, and local cheeses with homemade ‘goodies’ – perfect for enjoying over a cocktail or two with fine company and conversation.
Dan’s love and talent for pastry will be reflected in a tempting selection of biscuits and sweet treats, which will have a fun, nostalgic nod to childhood favourites – dessert trolleys, homemade custard creams, peanut brittle and marshmallows are all on the agenda. As such, Afternoon Tea will play an important role in No.15’s food offering and Dan will be keeping it classical while also having fun with with novel flavour pairings, bright splashes of colour and themes from botanicals to gentleman’s afternoon tea.
