On Tuesday 7th and Wednesday 8th February, we welcome Daniela Soto-Innes to the Lyle’s kitchen.
Running the kitchen at Enrique Olvera’s much lauded Cosme restaurant in New York City, she’s quickly become one the world’s most talked about chefs. This year, still only 26 years old, she’s won the James Beard Rising Star Chef Of The Year Award, saw her restaurant Cosme enter The World’s 50 Best at No. 96, and had a short documentary called ‘La Cocinera’ about her life, and the story behind her career, shown at this year’s Tribeca Film Festival.
Originally from Mexico City, where she grew up amongst a family that loved food, she became interested in cooking, visiting food markets and restaurants at a young age: at 5 years old she was placed in after-school cooking classes. At the age of 18 she moved to Austin where she graduated from Le Cordon Bleu College of Culinary Arts, and after travelling and working at restaurants in Texas, New York and Europe, she ended up in the kitchen of Enrique Olvera’s Pujol in Mexico City. In 2014, she moved to New York City to help open up his restaurant, Cosme.
Serving contemporary Mexican-inspired cuisine, Cosme’s team create dishes rooted in Mexican flavours and traditions, while celebrating local and seasonal ingredients. Think corn, beans and chiles from Mexico, combined with local Hudson Valley produce.
“Cosme represents a new state of Mexico. Oaxaca, Mexico City, the North – they all have different dishes because they use whatever they have. In Mexico, we don’t use rhubarb, but we have it here in New York so we can use the techniques of Mexico with the incredible ingredients we have here,” says Daniela.
Her technique driven dishes like uni tostadas with bone marrow salsa, duck carnitas and the famous corn husk meringue with corn mousse, have led to months-long waiting lists.

We are looking to constantly evolve. The Guest Series gives us an opportunity to see British produce in a new light, and it’s a chance to see what’s happening outside of our London bubble,” explains James Lowe, head chef at Lyle’s.
