Having worked side by side with Roberto Costa to dramatically reduce his energy costs by 50% at the Macellaio RC, Exmouth Market, we were delighted to receive an invitation to meet the restaurateur at his latest opening Macellaio RC, Union Street.
As we enter we are immediately greeted by Roberto who clearly is very proud of his latest opening. Macellaio RC, Exmouth Market offers Meat and Tuna and each of Roberto’s restaurants has a paired theme. Union Street’s is Meat and a Ligurian bakery or ‘Pizzeria secondo me’. Traditional Ligurian breads, vegetable tarts, fresh pasta and pastries which are all handmade daily.
We enjoyed a detailed guided tour of this modern theatrical restaurant from Roberto and then sat down with him to get an insight to how Macellaio RC evolved and his vision of where it’s going. Roberto is a charming host and very, very passionate about everything Macellaio RC. “It is all about good food delivered with real Italian passion. We source the best products, keep things simple and focus on quality.”
His passion for food came from his mother, not a chef but a great cook and his passion for butchery was inspired by his grandfather Giovanni. “The restaurants’ job is to simply do good food and good wine, take time to get everything right and not rush anything. It is all about teamwork. I am very passionate about all the elements that bring Macellaio RC together.”
On the energy side, we have seen a growing number of professional kitchens moving towards induction cooking, and thereafter upgrading their entire business energy solely to electricity.
Roberto’s new venture is one of these professional kitchens, embracing induction only cooking. Contradictorily to the gas powered kitchens long favoured by most chefs, Roberto says “I can get the same great flavours without using gas.”
The Macellaio RC Union Street will stand to achieve around a 15% to 20% reduction in kitchen energy costs through using induction kitchen equipment.
