OXBO Bankside, and Chef Paul Bates who has created an exclusive Honey cake ice-cream sundae in celebration of National Honey Week (24th-31st October), using their very own honey.
In May 2016, Hilton Bankside partnered with Bermondsey Street Bees to install 4 beehives, designed by Alex Monroe (famed for his “bee” necklace), on their meadow garden. The first honey harvest took place in September, which has since been served at OXBO’s renowned Saturday bottomless brunch. Now, to celebrate next week’s National Honey Week, Chef Paul Bates is launching a unique honey offering available from 24th-31st October, made with their very own Bankside honey.
Honey Cake Ice-Cream Sundae
Ingredients for 4 portions
Diced Honey cake
- 310g The Bankside Bees Honey
- 2 tablespoons lemon juice
- 3 Granny Smith apples
- 200g caster sugar
- 200g butter or margarine
- 100g dark Brown sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1 lemon zest
- 275g plain flour
- 1 tsp baking powder
- ½ tsp salt
- 8 Balls of Honey comb ice cream
- 8 Dessert spoons Honey
- ¼ Lt Whipped cream
- 8 Edible flowers
- 8 Wafers
- 4 Chocolate garnishes
Method
First make the honey cake!
- Preheat oven to 170C. Grease a 9-inch cake tin and line the base with baking parchment
- Peel and core the apples. Cut into 8-10 wedges
- In a frying pan, heat together 250g of honey with the lemon juice
- Add the apple to the frying pan and simmer for 10 minutes while spooning the honey over the apples. Then set aside to cool.
- Mix together sugars and butter until well combined. Add vanilla, lemon zest and 60g honey
- Gradually add eggs
- Sieve together flour, baking powder and salt then fold this into the mixture
- Spread mix into the prepared tin. Arrange the apples on top.
- Bake for 25-35 minutes.
Now you’re ready to create your Sundae!
- Drizzle the honey on the inside of the Sundae glass
- Place a ball of ice cream on the base of the glass, add a few pieces of the cake
- Add a little whipped cream and a little honey
- Repeat the process, top off with a few more pieces of cake and whipped cream
- Place the flowers on top, with the wafers and chocolate decoration
- Eat quickly!!

If you don’t have time to make or can’t get hold of honey comb ice cream, simply use vanilla with smashed up Crunchy bar!!!!
