At just 27 and with all manner of awards and accolades already under his belt, Chef Adam Handling has decided that 2016 is the year his cooking gets personal as he launches his new tasting menu at restaurant Adam Handling at Caxton.
With a belief that dining should not just be about superb food but also about telling his story, Chef Adam Handling has carefully crafted a menu that will illustrate some of the most important people, moments and adventures in Adam’s life.
In a manner reminiscent of a coming of age, Adam’s new menu is indicative of his journey throughout his 11 years of cooking. This is evident in the depth of flavours and experience demonstrated in what has to be one of the best value tasting menus in London – £50 for the seven-course menu or £66 for the eleven-course menu (without wines).
Beyond the theatrics, the dishes on Adam’s new menu demonstrate the real and increasing maturity of both his cooking and menu design. With masterful balance in flavours, and a succession of carefully ordered dishes, this menu takes diners on a unique culinary journey.
The journey begins with a small key, given to all diners at the start of the meal. The key unlocks Adam’s showpiece dish entitled ‘Mother’, combining slow-cooked egg yolk, truffle cream, celeriac puree, apple, seaweed powder, and truffle crisps. Giving a personal insight into Adam’s childhood memories, this dramatic dish is presented in a handcrafted, bespoke-made wooden chest.
These immersive and theatrically presented dishes are also complemented by a selection of other innovative dishes in the menu. The decadent ‘Liquid Gold’ features olive oil butter encased in the highest quality white chocolate, wrapped in 24 carat gold leaf and topped with caviar and truffle, whilst ‘Crab, Apple and Sea Herbs’ is presented on a bed of seaweed mixed with apple puree that is then immersed in liquid nitrogen, bringing the scents of Adam’s youth at the seaside to life.
Says Adam Handling: “I’ve spent a long time perfecting my cooking, growing as a chef and working out exactly what I want the style of my food to be. I’m excited to now launch a menu that can really showcase the creativity of me and my team as well as tell my story, which I hope my diners will relate to.”
