D&D restaurant Coq d’Argent has announced the appointment of new head chef, Damien Rigollet. Taking over the reins from Mickael Weiss, Damien originally joined the city restaurant in 2005 as senior sous chef, progressing to executive sous chef last year. Damien will continue to drive the restaurant forward to deliver an exquisite fine dining experience in the heart of the Square Mile.
D&D London’s David Loewi commented on Damien’s appointment, saying: “We are very excited to welcome Damien as head chef at Coq d’Argent. He already knows the business extremely well, having worked under Mickael for a number of years, but we also look forward to the changes and innovation he will be bringing.”
Damien’s menu features elegant takes on classic French meat and seafood favourites, each with a contemporary twist. Starter dishes include: Glazed pork cheek with red wine, truffle mousseline and crispy pigs ear; and Venison tartare with quails egg and celeriac remoulade. Main courses include: Spiced Dombes duck leg, olive braised, with Savoy cabbage and celeriac puree; Rose veal cutlet ‘Vallée d’Auge’, mushrooms, pomme purée, apple and Calvados sauce; Seared stone bass with Devon crab risotto; and Vol-au-vent wild mushrooms, poached duck egg, celeriac, spinach, puff pastry and Hollandaise sauce. Diners can also choose from the selection of grilled dishes including 21 day dry aged Châteaubriand double fillet, and Homard whole lobster. Desserts include: Poached pear with frozen vanilla parfait and hot chocolate sauce and Lemon tart with raspberry sorbet and coulis.
Damien trained for a number of professional qualifications including an undergraduate diploma, which he achieved whilst apprenticing at Michelin Star restaurant, Hostellerie Blanche de Castille in Dourdan. He worked his way up at a number of well known French restaurants in London such as The Bleeding Heart, Le Boudin Blanc and Le Gastro, and his passion and knowledge of French cuisine has remained at the forefront of his professional development.
