They may well describe their new roles as ‘plum’ jobs but Ian Tuggey and Paul Fielding, the new general manager and head chef at Tewkesbury Park Hotel & Golf Club, have certainly got their hands full with the hotel’s latest crop of home grown produce!
The family-owned and run hotelis currently celebrating an early bumper harvest of apples and plums – both of which Paul plans to feature on a specially themed seasonal menu.

Head chef Paul, whose wide experience includes leading the kitchen team at beachfront hotels in Jersey, specialising in fine Japanese cuisine for a private client and heading up the staff catering at the basketball, Velodrome and BMX events at the 2012 London Olympics, is determined to use as many fresh, local and seasonal ingredients as possible.
“Tewkesbury Park is right at the heart of a region that is renowned for its local produce and artisan food producers,” he says. “I’m going to incorporate as much as possible in the new menus which will focus on providing a great taste, great value experience.”

General manager Ian will also draw on his broad experience of the hospitality sector in his new role at the hotel, which is currently embarking on a major refurbishment of the public rooms, bedrooms and exterior. With more than 25 years’ experience of the hospitality sector in independent hotels and groups including Forte Posthouse, Ian is looking forward to the challenge of revitalising Tewkesbury Park and managing its transformation through the refurbishment programme.
“It’s a very exciting time for the hotel – and for the area – as the current refurbishment will restore the building to its former glory and create a venue which offers great food and beautiful rooms in the fantastic surroundings of our 176 acres,” said Ian. “The hotel will be a perfect wedding or special occasion venue, yet we’re close enough to town for guests to pop in for a relaxing coffee or a meal while enjoying our beautiful views!”
Tewkesbury Park’s refurbishment programme is already well under way; the approach from Lincoln Green Lane has been resurfaced and the exterior is being repainted. Nine luxury rooms are to be created in the original part of the former 18th century manor house, while 30 of the further 82 bedrooms will be upgraded over the next six to 12 months.
