The Brasserie Bar Co, which also owns Brasserie Blanc, has begun an extensive expansion of its White Brasserie pub brand following funding from ESO Capital six months ago. The group aims to open 20 new pubs within the next three years, including The Hare, which opens next week, The British Queen in Orpington in August and The Sun Inn in Chobham towards the end of the year.
Serving great quality, freshly cooked dishes based on Brasserie Blanc’s menu, The White Brasserie Company already operates two pubs, The King’s Head in Teddington and The Queen’s Head in Weybridge, both of which have shown consistent like-for-like growth from the outset. For employees, the cross-over offers the opportunity to experience both restaurant and pub environments for those eager to move across the brands.
With the expansion comes the appointment of new operations director, Paul Van Zijl – formerly operations manager with Gaucho Grill.
The Hare takes first step in portfolio growth

Designed by PNW, The Hare, which has been an established pub since 1706, has undergone a complete makeover. The 4,000 square foot, 120-cover pub will once again boast a classic pub feel with reclaimed wooden floors, oak beams, relaxed lighting and leather banquette seating. With neutral-toned walls, flashes of colour will be brought to the venue via contemporary artwork and colourful chequered fabrics. A large garden will provide space for a further 40-covers during warmer months.
Serving traditional British cuisine with French influences, The Hare will offer a seasonally changing menu using quality ingredients. A selection of sharing boards such as a Ploughman’s and Fisherman’s will sit alongside starters including warm ox tongue salad; Burgundian snails in garlic herb butter; and salmon tartare.
Mains will feature dishes like Toulouse sausage with a Lyonnaise sauce; fresh fig, Jervaulx blue cheese and onion tart; dressed Brixham crab with lemon mayonnaise; and 30 day dry-aged Cornish heritage steaks. Classic pub favourites include Mrs Keen’s gammon steak with a duck egg and chips and pie of the week. For dessert expect crêpes suzette with an orange and Cointreau sauce; chocolate and coffee marquise with a praline sauce; and summer berry savarin with crème Chantilly.
